Save Organizations as authors by going to your "Edit Metadata" panel (second icon at top of right panel in the library) and simply adding a "~" to the end of the organization you are listing as an author. This will override Papers from treating it as "First Name" "Last Name".
For instance: World Health Organization would be World Health Organization~
You can find the tilde "~" key at the top left of your keyboard.
You will see the tilde in metadata of your reference when viewing your article, but a citation created directly or via SmartCite will format correctly:
